Vegan Skillet Green Pizza

Briny black olives make the flavors pop in this vibrant pizza that tastes like spring on a plate! An easy vegan main dish that really satisfies.
Ingredients
- 10 ounces pre-made pizza dough (enough for a 10-inch crust)
- 3 teaspoons extra-virgin olive oil, divided use
- ¼ cup store-bought vegan pesto
- 1 medium zucchini, shaved into ribbons
- 3 medium asparagus spears, shaved into ribbons
- Salt and pepper
- ¼ cup Pearls Large Ripe Black Olives, sliced
- ¼ cup fresh or frozen green peas
- Handful mint or basil leaves
- Optional: 1/3 cup vegan ricotta
Cooking Instructions
- Position a rack in the bottom third of the oven and preheat to 500ºF. Rub the bottoms and sides of a 10-inch cast-iron skillet with 1 teaspoon of the olive oil.
- In a large bowl, toss together the zucchini and asparagus ribbons with the remaining 2 teaspoons of olive oil, 1/8 teaspoon salt, and a few turns of pepper.
- Stretch the pizza dough into a 10-inch round and place in the pan, leaving the edges a bit thicker to form a crust.
- Spread the pesto over the dough and top with the zucchini and asparagus ribbons, olives, and peas.
- Place the pizza in the oven and bake until the crust is golden and the veggies are tender, 8-12 minutes.
- Remove from the oven and top with the mint and ricotta, if using.
- Use a metal spatula to remove the pizza to a board and cut it into wedges. Serve warm.
