Trio of Snack Sandwiches

These sandwiches are ready to party! Easily whip up a platter of these fancy tea sandwiches for snacking or entertaining. With cucumber, hummus, and egg salad options, there’s something for everyone.
Ingredients
Hummus Kalamata:
- 8 ounces Pearls Organic Classic Hummus
- ½ cup Pearls Specialties Pitted Kalamata Greek Olives, coarsely chopped
- 8 slices white bread
- 3-4 medium tomatoes, thinly sliced
- ¼ cup slivered basil leaves
Cucumber Black Olive:
- 8 ounces cream cheese spread or whipped cream cheese, softened
- 2 tablespoons chopped fresh dill
- ½ cup Pearls or Early California Black Ripe Olives, coarsely chopped
- 8 slices white bread
- 1 English cucumber, thinly sliced
Pimento Olive & Egg Salad:
- 6 hard boiled eggs, peeled
- ¼ cup mayonnaise
- 2 teaspoons mustard
- 2 tablespoons finely chopped shallot
- ¼ cup finely chopped celery
- ¼ cup finely chopped chives
- ½ cup Pearls or Early California Pimiento Stuffed Olives, chopped
- Salt and pepper
- 8 slices white bread
Cooking Instructions
Hummus Kalamata
- In a small bowl, stir together the hummus and kalamata olives.
- Spread the hummus on one side of each slice of bread.
- Top 4 of the bread slices with tomato and basil.
- Sandwich the bread slices together.
Cucumber Black Olive:
- In a medium bowl, stir together the cream cheese, dill, and chopped black olives.
- Spread the cream cheese mixture on one side of each slice of bread.
- Top 4 of the bread slices with cucumber slices.
- Sandwich the bread slices together.
Egg Salad
- In a large bowl, stir together the eggs, mayonnaise, mustard, shallot, celery, chives, and chopped olives with as much salt and pepper as you like to your taste.
Cut off the crusts of each sandwich, then cut each sandwich in half. Serve the sandwiches on a platter, topped with toothpicks and matching olives if you like. These can be made ahead and covered in the refrigerator for up to several hours before serving.
