The Perfect Pearls Day After Turkey Sandwich

The ritual of the transformation of holiday leftovers into a very serious sandwich is a celebration in and of itself.  Up your game and make a spicy garlicky mayo to dress the sandwich and a quick Chef’s note…this sandwich must be eaten standing over the kitchen sink and chased with a slice of pie!

Ingredients

  • 1 batch homemade or 1 cup store-bought mayonnaise, see below
  • 1 jar Pearls Double Stuffed Jalapeno Garlic Olives, drained and roughly chopped
  • 4 slices of your rustic bread of choice
  • 1/2 cup Stuffing, warmed
  • 6 slices freshly roasted turkey, warmed
  • 1/2 cup leftover Cranberry Sauce

Immersion Blender Homemade Mayonnaise

  • 1 large egg
  • Juice of 1 lemon
  • 1 tablespoon Dijon mustard
  • 1 tablespoon red wine vinegar or white wine vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1 cup avocado, grapeseed or vegetable oil

Cooking Instructions

  1. In a small mixing bowl, combine the mayonnaise and the roughly chopped olives.  Stir to combine and store in the fridge for at least one hour or preferably overnight.
  2. To assemble the sandwiches, lay the bread slices on a work surface.  Spread the bottom slice of bread liberally with the Jalapeno Garlic Mayonnaise.  Top with warm stuffing and slices of warm turkey.  Spread the top piece of bread with cranberry sauce and assemble the sandwiches.

Immersion Blender Homemade Mayonnaise:

  1. Combine all of the ingredients in a tall jar or vessel with a wide opening at the top.  Insert your immersion blender and blend, slowly moving it up and around to incorporate the ingredients to make a thick mayonnaise.  Remove the blender, adjust the seasoning and voila!
