Ingredients
- 1 cup Pearls Specialties Garlic & Jalapeño Double Stuffed Queen Olives, halved or sliced
- 3 1⁄2 – 4 cups peeled & 1⁄2-inch cubed sweet potatoes
- 3 tablespoons olive oil
- 2 tablespoons maple syrup
- 1 teaspoon paprika
- 1⁄2 teaspoon garlic powder
- 1⁄2 teaspoon chili powder
- 1⁄2 teaspoon cayenne pepper
- 1⁄4 cup crumbled goat cheese
- 1 tablespoon pumpkin seeds, toasted
- Salt and pepper, to taste
Cooking Instructions
- Preheat the oven to 425 F. Line a large baking sheet with parchment paper. Set aside.
- Place sweet potatoes in a large bowl. Drizzle with olive oil and add maple syrup, paprika, garlic powder, chili powder, cayenne, salt, and pepper. Toss to coat well.
- Spread sweet potatoes out onto the prepared baking sheet.
- Bake for 30-35 minutes, flipping the sweet potatoes halfway through baking time.
- Transfer the roasted potatoes to a serving plate.
- Top with olives, goat cheese, and pumpkin seeds. Serve immediately.
