Ingredients

  • 1 cup Pearls Specialties Garlic & Jalapeño Double Stuffed Queen Olives, halved or sliced
  • 3 1⁄2 – 4 cups peeled & 1⁄2-inch cubed sweet potatoes
  • 3 tablespoons olive oil
  • 2 tablespoons maple syrup
  • 1 teaspoon paprika
  • 1⁄2 teaspoon garlic powder
  • 1⁄2 teaspoon chili powder
  • 1⁄2 teaspoon cayenne pepper
  • 1⁄4 cup crumbled goat cheese
  • 1 tablespoon pumpkin seeds, toasted
  • Salt and pepper, to taste

Cooking Instructions

  1. Preheat the oven to 425 F. Line a large baking sheet with parchment paper. Set aside.
  2. Place sweet potatoes in a large bowl. Drizzle with olive oil and add maple syrup, paprika, garlic powder, chili powder, cayenne, salt, and pepper. Toss to coat well.
  3. Spread sweet potatoes out onto the prepared baking sheet.
  4. Bake for 30-35 minutes, flipping the sweet potatoes halfway through baking time.
  5. Transfer the roasted potatoes to a serving plate.
  6. Top with olives, goat cheese, and pumpkin seeds. Serve immediately.
