Ingredients
- 6 ounces brie cheese, rind removed and cut into ½-inch pieces
- 1 cup shredded mozzarella cheese
- 1/2 cup Pearls Specialties Castelvetrano Olives, roughly chopped
- 2 garlic cloves, grated
- 1/2 cup leftover Cranberry Sauce
- 8 fresh jalapeños
- 8 slices prosciutto, cut in half lengthwise
- Salt & freshly ground pepper
Cooking Instructions
- Preheat the oven to 400°F.
- In a mixing bowl, combine the brie cheese, shredded mozzarella, Castelvetrano olives, grated garlic and cranberry sauce. Season with salt and pepper and stir to combine.
- Cut each jalapeno in half lengthwise and use a spoon to remove the seeds and veins. Fill the cavity of each jalapeno half with the cheese mixture and wrap each half with a strip of prosciutto.
- Place the stuffed jalapenos on a baking sheet and bake until the prosciutto is crispy and the cheese is bubbly, about 20 minutes. Serve warm.
