Cranberry, Brie & Castelvetrano Olive Jalapeño Poppers

You’ve been warned….these are addictive!  The perfect combination of cheesy, sweet, salty and spicy, these Poppers are everything!  Perfect as a holiday appetizer, for a football party or as a cocktail snack, you’ll make them over and over.

Ingredients

  • 6 ounces brie cheese, rind removed and cut into ½-inch pieces
  • 1 cup shredded mozzarella cheese
  • 1/2 cup Pearls Specialties Castelvetrano Olives, roughly chopped
  • 2 garlic cloves, grated
  • 1/2 cup leftover Cranberry Sauce
  • 8 fresh jalapeños
  • 8 slices prosciutto, cut in half lengthwise
  • Salt & freshly ground pepper

Cooking Instructions

  1. Preheat the oven to 400°F.
  2. In a mixing bowl, combine the brie cheese, shredded mozzarella, Castelvetrano olives, grated garlic and cranberry sauce.  Season with salt and pepper and stir to combine.
  3. Cut each jalapeno in half lengthwise and use a spoon to remove the seeds and veins.  Fill the cavity of each jalapeno half with the cheese mixture and wrap each half with a strip of prosciutto.
  4. Place the stuffed jalapenos on a baking sheet and bake until the prosciutto is crispy and the cheese is bubbly, about 20 minutes.  Serve warm.
